80% Vegan (Vegetarian) - Carrot Cake

My friend shared her vegan recipes because she's on her way to be a vegan hehe (I'd Iove to but not ready yet). Think this is my first time ever, to make a vegan cake. I'm not going to lie, it's not 100% vegan because to me, what is a cake without butter. So, I substituted the oil with melted butter - the rest, vegan friendly ingredients. This is a carrot cake, which recipes you can always find on the internet. Super easy and simple to make, with all of the healthy natural ingredients. The "healthy natural" part is the one I'd like to share. The recipe I used, requires both baking powder and baking soda for the cake. Usually I reduce the amount as prescribed to avoid any unnecessary chemical reaction (been there done that). I also have reduced small amounts of it from the recipe. However, after it's done, I found that in the centre there's a small part of the cake that taste bitter. I knew right away it resulted from the reaction of the baking soda. Baking soda needs an additional chemical ingredient to properly function, and in this vegan cake all were so natural - hence, the bitterness of baking soda didn't have a match and couldn't blend-in well. It comprises of grated carrot, flour, sugar, salt, cinnamon, ginger, nutmeg, vanilla, sliced almonds, oil (mine was melted butter), baking powder and soda - no eggs at all. In my next vegan cake, perhaps I'll reduce the baking soda a little bit more or add some chemical like apple cider vinegar. Unless that centre part, the rest tasted super good. Suits my level of sweetness because the carrots add sweetness naturally so we don't need much sugar involved.

People usually use walnuts, but I only have sliced almonds (for my weekly brownies LOL), so I substitute the walnuts with sliced almonds and it's good too. The cakes tasted better after it's cool - getting better and better as time goes by. Well, as the almighty Julia said, "learn from your mistakes, be fearless and above all have fun!". In these WFH days, I can bake whenever I want (don't have to wait for the weekend anymore which sometimes ended up with works), and it's fun because I love cookies and cake so much LOL. Hopefully I can switch my cake and cookies into vegans, because it's healthier (and I know it takes a lot of effort and determination for a sweet-tooth-choco-mania like myself). Happy munching.
