Again, IDK the English term but Indo peeps will know this. Another special food during holiday season, cooked with coconut milk as well. Originally, it's not with meat but liver (cikin or cow). But I don't really fancy liver even if it's a foie gras, isn't it liver is where all the toxic gather and weird protozoas and amoeba live? perhaps I think too much. Once again, too bad the video of my IG Reels cannot be uploaded because I really2 want to show my super cheap wok that I'm proud of. With just IDR 100K (approx. USD 7), we can get the Wok Hei and a non-stick experience in cooking. You must've known right, the breathe of the wok wkwk.. Wok Hei! Who watch "Wok With Yan" back in the '90s? me me me...
Actually I make this spicy food quite often because it's one of my favorites (and husband likes it too). However, this one particular time, I did a terrible mistake with the meat and think it's worth to share. Luckily I have meatballs, fishballs and tofu ready in the fridge so I use them instead because my 350 gram meat was a complete failure. So it should be Spicy Potato-Meat & Fish Balls. Oh, dont forget the bitter beans part. It's not a spicy potato meat without the bitter beans.

Turned out the fishballs and meatballs r oishi as well.. yeay..

The unlimited spices used for this food. If you're working, better prepare them the night before because it'll take 2 years preparation wkwk. Do u see those nearly scorched candlenuts? yes, need to roast them first. And the ground coriander etc etc including peeling the bitter beans. When I was a kid, I used to be very skillful in peeling bitter beans, IDK where the skill went wkwk or maybe am just so lazy nowadays.
Highlights:
Tenderize the meat. This is the one I referred to. So I finally tried the tenderize the meat hack by using baking soda. With 5 times successful results, me being me, tried to explore more and testing this and that. So I add the baking soda almost twice of the usual dose - just curious about the tenderness level, and voila, the meat was never cooked even if I've been cooking it for 30 minutes and it's totally crumbled. FAILED.
Coconut milk preference. Sometimes I milk the coconut myself, or buy the ready to use coconut milk when I don't have much time. When I first using the ready to use one, I didn't taste it prior to pouring down the coco milk into my food. Turned out the ready to use coco milk is sweet. And I have to correct the taste, because this food should be spicy and not sweet.
